How To Make Asparagus Soup
A creamy and nutritious soup made with fresh asparagus, perfect for a light appetizer or lunch.

Ingredients
- 1 lb asparagus, trimmed and chopped
- 1 small onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions

In a large pot, heat some olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

Add the chopped asparagus to the pot, along with the vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the asparagus is tender.

Use an immersion blender or transfer the soup to a countertop blender to puree until smooth.

Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld together.

Serve the asparagus soup hot, garnished with a sprinkle of fresh chopped parsley or a drizzle of cream, if desired.
