Cheesy Potato Soup Recipe

This homemade potato soup is a nice pick me up on a cold day. Try with thick slices of bread and butter.

Ingredients

  • 1 lb russet potatoes, cubed
  • 4 cups water
  • ¼ cup butter
  • ½ cup milk
  • salt & pepper, to taste
  • 14 oz chicken broth
  • 4 slices American cheese

Instructions

  1. Start by boiling 4 cups of water, add in potatoes and cook until tender.
  2. Reserve 1 cup of the liquid, and drain potatoes.

  3. Return potatoes to pot and add butter.
  4. Start mashing potatoes and butter together, adding milk as needed to get a chunky mashed potato consistency.
  5. Add salt, pepper, and broth, mix well.
  6. Bring to a boil, adding reserved potato water to bring to desired consistency.
  7. Once soup is boiling, add in American cheese slices, and stir well.
