How To Make Beer Soup (Biersuppe)

Enjoy your boozy drink made into a rich German beer soup for a change. Packed with malty and tangy tones, this dish is made with sour cream and cheese.

Ingredients

  • 6cupsbeer
  • 2egg yolks
  • 1cupsour cream
  • 1tspcornstarch
  • 1tspwhite sugar
  • ½tspsalt
  • 4slicesFrench bread,cut into 1-inch cubes
  • 1cupswiss cheese,shredded

Instructions

  1. In a medium saucepan over medium heat, bring beer, covered, to a boil.

  2. Meanwhile, in a bowl, beat together egg yolks, sour cream, cornstarch, sugar and salt until well blended. Transfer mixture to a large saucepan over low heat. Pour in hot beer, a little at a time, stirring until well combined. Do not boil.

  3. To serve, divide bread cubes into 4 warmed soup bowls. Sprinkle cheese over bread.

  4. Pour hot soup over all and serve piping hot.
