Ingredients

  • 1 pound dried beans (such as white or pinto), soaked overnight and drained
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 pound cooked ham, diced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Place the soaked and drained beans in a slow cooker.

  2. Add the diced onion, carrots, celery, garlic, and ham to the slow cooker.

  3. Pour in the chicken or vegetable broth, and sprinkle in the dried thyme.

  4. Season with salt and pepper to taste.

  5. Stir everything to combine.

  6. Cover and cook on low heat for 6-8 hours or until the beans are tender.

  7. Serve hot and enjoy!
