Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 large potatoes, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.

  2. Add diced onion and minced garlic to the skillet. Cook until onion is translucent.

  3. Add diced potatoes and cook for 5 minutes, stirring occasionally.

  4. Stir in diced bell peppers, frozen corn, frozen peas, salt, black pepper, paprika, and dried thyme. Cook for another 5 minutes.

  5. Reduce heat to low and cover the skillet. Simmer for 15-20 minutes, or until potatoes are tender.

  6. Sprinkle shredded cheddar cheese on top of the mixture. Cover and let it melt for a few minutes.

  7. Serve hot.
