How To Make Coconut Bread Pudding

Ingredients
- 4 cups of cubed bread
- 1 cup of coconut milk
- 1/2 cup of sugar
- 2 eggs
- 1/2 teaspoon of vanilla extract
- 1/4 teaspoon of ground cinnamon
- 1/4 cup of shredded coconut
- 1/4 cup of raisins
Instructions

Preheat the oven to 350°F (175°C).

In a large bowl, combine the coconut milk, sugar, eggs, vanilla extract, and ground cinnamon. Whisk until well mixed.

Add the cubed bread to the bowl and gently mix until all the bread pieces are coated with the coconut milk mixture. Let it sit for 10 minutes to allow the bread to absorb the liquid.

Grease a baking dish and pour the bread mixture into the dish. Sprinkle the shredded coconut and raisins on top.

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the pudding is set.
