How To Make Joella’s Red Beans and Rice Recipe

Serves:

Ingredients

  • 1 pound dried red beans, rinsed and sorted
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 ham hock or smoked turkey leg
  • 6 cups water
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 4 cups cooked white rice

Instructions

  1. In a large pot, combine the red beans, onion, bell pepper, garlic, ham hock or turkey leg, water, Cajun seasoning, thyme, and salt.

  2. Bring to a boil, then reduce the heat to low and simmer for 1 hour and 15 minutes, stirring occasionally, until the beans are tender and the mixture is thick and creamy.

  3. Remove the ham hock or turkey leg and shred the meat, adding it back to the pot.

  4. Serve over cooked white rice.
