How To Make Mini Cheesecakes with Vanilla Wafers

Ingredients
- 8 vanilla wafers
- 1 cup cream cheese
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- 1 egg
- 1/4 cup sour cream
Instructions

Preheat the oven to 325°F (160°C).

Place a vanilla wafer at the bottom of each muffin cup in a muffin tin.

In a mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth.

Add the egg and mix well.

Stir in the sour cream until well combined.

Pour the cream cheese mixture over the vanilla wafers in the muffin cups, filling each cup about 3/4 full.

Bake for 20-25 minutes or until set.

Remove from the oven and let cool completely in the muffin tin.

Once cooled, refrigerate for at least 2 hours before serving.
