How To Make Crockpot Pulled-Pork Fajitas

A delicious recipe of pulled pork fajitas staying true to its Tex-Mex cuisine origins! A delicately tender pork stips seasoned with Mexican flavors along with the good ol' barbecue sauce. It's best served with fresh warm corn tortillas.

Ingredients

  • 1/2 pound boneless pork loin roast
  • 1 medium onion , thinly sliced
  • 2 cups barbecue sauce
  • 3/4 cup salsa
  • 3 tbsp. chili powder
  • 1 tbsp. Mexican seasoning
  • 9 flour tortillas

Instructions

  1. Remove excess fat from pork.
  2. Place pork in 3 1/2 to 6 quart slow cooker; arrange onion on top.
  3. Mix remaining ingredients except tortillas; pour over pork.
  4. Cover and cook on low heat setting 8 to 10 hours or until pork is very tender.
  5. Remove pork; place on large plate.
  6. Use 2 forks to pull pork into shreds.
  7. Pour sauce into bowl; stir in pork.
  8. Spoon filling onto tortillas; roll up.
