Ingredients

  • 3 lbs pork shoulder
  • 2 tbsp jerk seasoning
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup BBQ sauce
  • 2 ripe bananas, diced
  • 1/2 red onion, diced
  • 1 jalapeno, seeded and minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • 4 buns, for serving

Instructions

  1. Rub the pork shoulder with jerk seasoning, making sure to coat it evenly.

  2. Place the sliced onion and minced garlic in the bottom of a slow cooker.

  3. Add the seasoned pork shoulder on top of the onions and garlic.

  4. Pour chicken broth over the pork shoulder.

  5. Cover and cook on low for 8 hours or until the pork is tender and easily pulled apart with a fork.

  6. While the pork is cooking, prepare the banana salsa. In a bowl, combine diced bananas, diced red onion, minced jalapeno, lime juice, and salt and pepper to taste. Mix well and set aside in the refrigerator until ready to serve.

  7. Once the pork is cooked, remove it from the slow cooker and shred it using two forks.

  8. Return the shredded pork to the slow cooker and stir in BBQ sauce. Cook on low for an additional 30 minutes to allow the flavors to meld together.

  9. Toast the buns to your liking.

  10. Serve the pulled pork on the toasted buns, topped with a generous scoop of banana salsa.

  11. Enjoy!
