Ingredients

  • 1 lb prawns, peeled and deveined
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup roasted red peppers
  • 1/2 cup almonds
  • 1/4 cup tomato paste
  • 2 tbsp red wine vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened and fragrant.

  2. In a food processor, combine the roasted red peppers, almonds, tomato paste, red wine vinegar, smoked paprika, cayenne pepper, salt, and pepper. Blend until smooth and creamy.

  3. Add the romesco sauce to the skillet with the onions and garlic. Stir well to combine.

  4. Season the prawns with salt and pepper, then add them to the skillet with the sauce. Cook for 2 to 3 minutes on each side, until the prawns are pink and cooked through.

  5. Serve the prawns with romesco sauce over a bed of cooked rice or with crusty bread. Garnish with fresh parsley.
