How To Make Sweet & Sour Prawns

Ingredients

  • 1.5 lbs of prawns, peeled and deveined
  • 1/4 cup of cornstarch
  • 1/4 cup of pineapple juice
  • 1/4 cup of ketchup
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of soy sauce
  • 2 tablespoons of brown sugar
  • 1 tablespoon of vegetable oil
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)
  • Cooked rice, for serving

Instructions

  1. In a mixing bowl, toss the prawns with cornstarch until evenly coated.

  2. In a separate bowl, whisk together pineapple juice, ketchup, rice vinegar, soy sauce, and brown sugar to make the sweet and sour sauce.

  3. Heat vegetable oil in a large skillet or wok over medium heat. Add the prawns and cook until golden brown and cooked through, about 2-3 minutes per side. Remove the prawns from the skillet and set aside.

  4. In the same skillet, add the bell peppers, onion, garlic, and ginger. Sauté until the vegetables are tender, about 3-4 minutes.

  5. Pour the sweet and sour sauce over the vegetables and stir to combine. Cook for another 2 minutes until the sauce thickens.

  6. Return the cooked prawns to the skillet and toss to coat them in the sauce. Cook for an additional minute to heat through.

  7. Season with salt and pepper to taste. Serve the sweet and sour prawns over cooked rice and garnish with chopped green onions.
