How To Make Sweet Potato & Caramelised Onion Rolls

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

  • 2 medium sweet potatoes, peeled and cubed
  • 1 large onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 package of puff pastry sheets
  • 1 egg, beaten (for egg wash)


  1. Preheat your oven to 400°F (200°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelised, about 10-15 minutes. Remove from heat and set aside.

  3. In a separate pot, boil the sweet potatoes until fork-tender. Drain and mash until smooth.

  4. Add the caramelised onions to the mashed sweet potatoes, along with the garlic powder, dried thyme, salt, and pepper. Mix well.

  5. On a lightly floured surface, roll out the puff pastry sheets to a thickness of about 1/4 inch.

  6. Spoon the sweet potato and onion mixture onto one half of each pastry sheet, leaving a border around the edges.

  7. Fold the other half of the pastry over the mixture, and seal the edges by pressing them together with your fingers or a fork.

  8. Cut each pastry roll into 4 equal-sized pieces. Place them on a baking sheet lined with parchment paper.

  9. Brush the tops of the rolls with the beaten egg.

  10. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and puffed up.

  11. Serve hot and enjoy!
