How To Make Sweet Potato & Caramelised Onion Rolls

Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 large onion, thinly sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper, to taste
- 1 package of puff pastry sheets
- 1 egg, beaten (for egg wash)
Instructions

Preheat your oven to 400°F (200°C).

In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelised, about 10-15 minutes. Remove from heat and set aside.

In a separate pot, boil the sweet potatoes until fork-tender. Drain and mash until smooth.

Add the caramelised onions to the mashed sweet potatoes, along with the garlic powder, dried thyme, salt, and pepper. Mix well.

On a lightly floured surface, roll out the puff pastry sheets to a thickness of about 1/4 inch.

Spoon the sweet potato and onion mixture onto one half of each pastry sheet, leaving a border around the edges.

Fold the other half of the pastry over the mixture, and seal the edges by pressing them together with your fingers or a fork.

Cut each pastry roll into 4 equal-sized pieces. Place them on a baking sheet lined with parchment paper.

Brush the tops of the rolls with the beaten egg.

Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and puffed up.
