How To Make Thai Mussels & Prawns

Ingredients

  • 500g mussels
  • 500g prawns
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 1 lemongrass stalk, sliced
  • 1 thumb-sized piece of ginger, grated
  • 1 can coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • Fresh cilantro, for garnish

Instructions

  1. Clean and debeard the mussels. Peel and devein the prawns.

  2. In a large pan, heat some oil over medium heat. Add the garlic, chili, lemongrass, and ginger. Cook until fragrant.

  3. Add the prawns and cook until pink and cooked through. Remove from the pan and set aside.

  4. In the same pan, add the coconut milk, fish sauce, soy sauce, and sugar. Bring to a simmer.

  5. Add the mussels to the pan, cover, and cook until they open up, about 5 minutes.

  6. Return the cooked prawns to the pan and stir to combine.

  7. Serve the Thai mussels and prawns in bowls, garnished with fresh cilantro.
