Serves:
Ingredients
- 4 fish fillets (such as cod or haddock)
- 4 large potatoes, peeled and diced
- 1 cup frozen peas
- 4 tablespoons butter
- 1/4 cup milk
- Salt and pepper, to taste
Instructions
-
Preheat the oven to 400°F (200°C). Place the fish fillets on a baking sheet and season with salt and pepper. Bake for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
-
While the fish is baking, cook the diced potatoes in a large pot of boiling salted water until tender. Drain the potatoes and return them to the pot.
-
Add the butter and milk to the pot with the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
-
In a separate pot, cook the frozen peas according to the package instructions. Drain well.
-
Serve the baked fish fillets on top of a bed of mashed potatoes, with a side of peas. Enjoy!
