Rinse sushi rice and cook with water according to package instructions.

In a small saucepan, heat rice vinegar, sugar, and salt until dissolved.

Once rice is cooked, add vinegar mixture and stir to combine.

Leave rice to cool then take about 1/4 cup of rice and form into a long oval shape.

Place a fresh oyster on top of the rice and wrap with a strip of nori.

Repeat with remaining oysters.

Cut into bite-sized pieces and serve with wasabi and soy sauce.
