How To Make Moroccan Salmon Cakes with Garlic Mayonnaise
Unlike your typical fish patties, these salmon cakes are loaded with spiced spinach and couscous, then served with a rich garlic mayo, for a filling meal!

Ingredients
For Garlic Mayonnaise:
- 1½cupmayonnaise
- 1garlic clove,crushed
- ⅛tsppaprika
For Salmon Cakes:
- ½cupcouscous
- ⅔cuporange juice
- 14.75ozred salmon,drained
- 10ozfrozen spinach,chopped, thawed, drained and squeezed dry
- 2egg yolks,beaten
- 2garlic cloves,crushed
- 1tspground cumin
- ½tspground black pepper
- ½tspsalt
- 3tbspolive oil
Instructions

In a small stainless steel or glass bowl, stir together the mayonnaise, garlic, and paprika. Set aside.

Prepare the couscous according to package directions using the orange juice in place of water.

In a mixing bowl, combine the cooked couscous, red salmon, drained spinach, egg yolks, garlic, cumin, black pepper, and salt. Form into patties.

In a large skillet over medium heat, heat the olive oil and fry patties for 8 to 10 minutes until golden brown, turning once.

Serve with garlic mayonnaise, and enjoy!
