  • 1 lb fresh salmon fillets, cooked and flaked
  • 2 eggs, beaten
  • 1/4 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 2 green onions, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, combine the cooked salmon, beaten eggs, breadcrumbs, mayonnaise, green onions, dill, lemon juice, Dijon mustard, salt, and black pepper. Mix until well combined.

  2. Shape the mixture into 8 equal-sized patties and place them on a baking sheet lined with parchment paper.

  3. Heat the vegetable oil in a large skillet over medium heat. Cook the salmon cakes for about 3-4 minutes on each side, or until they are golden brown and cooked through.

  4. Serve the salmon fish cakes hot with a side of tartar sauce or lemon wedges.
