Ingredients
- 24 fresh oysters
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 1 cup cherry tomatoes, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 tsp red pepper flakes
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions

Preheat the grill to medium-high heat.

Shuck the fresh oysters and place them on a baking sheet.

In a small skillet, heat the olive oil over medium heat.

Add the minced garlic and cook until fragrant, about 1 minute.

Add the diced cherry tomatoes, parsley, basil, red pepper flakes, salt, and pepper.

Cook for 5 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Spoon the tomato and herb sauce over each oyster.

Place the oysters on the grill and cook for 5-7 minutes, until the edges begin to curl and the sauce is bubbly.

Remove from the grill and serve immediately with lemon wedges.
