Ingredients
- 4 walleye (pickerel) fillets
- 1/4 cup all-purpose flour
- 1/4 cup cornmeal
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 2 tbsp vegetable oil
- Lemon wedges, for serving
Instructions

In a shallow dish, mix together flour, cornmeal, salt, black pepper, paprika, and cayenne pepper.

Coat each walleye (pickerel) fillet in the flour mixture, shaking off any excess.

Heat vegetable oil in a large skillet over medium heat.

Carefully place the coated fillets into the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.

Remove the fillets from the skillet and place them on a paper towel-lined plate to drain excess oil.

Serve the Canadian walleye (pickerel) fillets hot with lemon wedges on the side.
