Every bite of this delicious and filling sandwich is loaded with smoked turkey, slaw, and tomatoes in a crisp, broiled country bread.

Ingredients

  • 2tbspwine vinegar
  • 1lbred cabbage,(about ⅓ head)
  • 2carrots
  • ½cupmayonnaise
  • ¼tspground cumin
  • ¼tsppaprika
  • ¼tspsalt
  • ¼tspfresh-ground black pepper
  • 8slice(thick) from 1 large round loaf of country bread
  • 1lbsmoked turkey
  • 1lbtomatoes

Instructions

  1. In a medium stainless-steel saucepan, heat the vinegar over moderate heat.

  2. Add the red cabbage and toss for 1 to 2 minutes until it is starting to wilt.

  3. Transfer the cabbage to a medium glass or stainless-steel bowl and toss with the carrots, mayonnaise, cumin, paprika, salt, and pepper. Heat the broiler.

  4. Put the bread on a baking sheet and broil for about 3 minutes in all, turning once, until crisp on the outside but still slightly soft in the center.

  5. Sandwich the turkey, sliced tomato, and slaw between pieces of toast.
