  • 1 pound ground turkey
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup tomato sauce
  • 1/2 cup low sodium chicken broth
  • Optional toppings: shredded cheese, green onions, cilantro, sour cream

Instructions

  1. In a large skillet, cook the ground turkey over medium-high heat until browned. Drain any excess fat.

  2. Add the cooked ground turkey to a slow cooker along with the onion, bell peppers, garlic, chili powder, cumin, smoked paprika, cayenne pepper, and salt. Stir to combine.

  3. Add the diced tomatoes, kidney beans, tomato sauce, and chicken broth to the slow cooker. Stir to combine.

  4. Cover and cook on low for 4-6 hours, or until the vegetables are tender.

  5. Serve hot with optional toppings.
