How To Make Meatloaf Sandwiches

Whip up a filling meal with this sandwiches recipe! It’s made with ground beef and pork, tomato relish, and rye bread, for a filling afternoon snack.

Ingredients

For Meatloaf:

  • 1cupwhole milk
  • 1cupwhite bread
  • 1lbground beef
  • 1lbground pork
  • 1lbground buffalo
  • ½cupparmesan cheese,freshly grated
  • 1medium onion
  • 2large eggs
  • 3garlic cloves
  • 2tbspdried oregano
  • 5tbspworcestershire sauce
  • 1tbspcoarse salt
  • freshly ground pepper,to taste

For Tomato Relish:

  • 2ripe tomatoes
  • 2tbspextra virgin olive oil
  • 2small shallots
  • ½cupwater
  • ¼cupsugar
  • 6tbspbalsamic vinegar
  • 2tbsphoney
  • 1pinchcayenne pepper
  • 1tspcoarse salt

For Assembling:

  • 4garlic cloves
  • ¼cupextra virgin olive oil
  • 1loaf rye bread
  • 2cuplamb’s lettuce,(mâche)
  • fries,for serving

Instructions

Meatloaf:

  1. Preheat oven to 350 degrees F.

  2. Mix the milk and bread in a large bowl, and let stand for 5 minutes. Mix in the remaining ingredients through salt using your hands. Season with pepper.

  3. Form meat mixture into a 5×12-inch loaf on a rimmed baking sheet.

  4. Bake for about 1 hour until browned and meatloaf registers 140 degrees F on an instant-read thermometer.

  5. Let cool slightly, then cut into ½-inch-thick slices.

Tomato Relish:

  1. Preheat the broiler. Arrange tomatoes on a baking sheet, and brush with oil.

  2. Broil tomatoes for 5 to 10 minutes until softened and charred. Let cool, then chop.

  3. Heat oil in a medium saucepan over medium heat. Add shallots, and cook for about 5 minutes until softened. Add water and sugar, bring to a simmer, and cook until reduced by half.

  4. Add charred tomatoes, vinegar, and honey, and cook, stirring occasionally, for 4 minutes. Stir in cayenne and salt. Strain, and discard liquid. Let cool.

To Assemble:

  1. Purée garlic and oil in a blender. Brush 1 side of each slice of bread with garlic oil.

  2. Top half the bread with meatloaf, tomato relish, and mâche. Top with remaining bread, garlic-oil side down.

  3. Serve with fries and enjoy.
