How To Make Sesame Halloumi Parcels with Sweet Potato Tahini Mash & Chopped Herb Salad

Ingredients
- 300g halloumi, cut into rectangles
- 2 tbsp sesame seeds
- 4 sheets of filo pastry
- 2 sweet potatoes, peeled and diced
- 2 tbsp tahini
- Juice of 1 lemon
- 2 tbsp chopped fresh herbs (such as parsley and mint)
- 2 cups mixed salad leaves
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

In a mixing bowl, combine the sesame seeds with a pinch of salt. Roll each halloumi rectangle in the sesame seeds until coated.

Place one sheet of filo pastry on a clean surface and brush it lightly with olive oil. Repeat with the remaining filo sheets.

Place a sesame-coated halloumi rectangle on one end of each filo sheet and roll it up tightly to form a parcel. Repeat with the remaining halloumi rectangles.

Place the parcels on a baking tray and bake in the preheated oven for 15-20 minutes, or until the filo pastry is golden and crispy.

While the parcels are baking, cook the diced sweet potatoes in boiling water until tender. Drain and mash them with tahini, lemon juice, salt, and pepper.

In a separate bowl, toss the mixed salad leaves with olive oil and season with salt and pepper.

Serve the sesame halloumi parcels with a dollop of sweet potato tahini mash and a handful of chopped fresh herbs. Accompany with the herb salad.
