Serves:

Ingredients

  • 4 slices of whole grain bread
  • 4 salmon fillets
  • 1 tablespoon of sesame oil
  • 1 bunch of asparagus, trimmed
  • 2 tablespoons of sesame seeds
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 1 lemon, cut into wedges
  • 4 tablespoons of Greek yogurt

Instructions

  1. Preheat the grill or a grill pan.

  2. Brush the salmon fillets with the sesame oil and season with salt and pepper.

  3. Grill the salmon for about 4 minutes on each side, or until it flakes easily with a fork.

  4. While the salmon is grilling, toss the asparagus in olive oil and season with salt and pepper.

  5. Grill the asparagus for about 2-3 minutes, or until tender and slightly charred.

  6. Toast the slices of bread until golden brown.

  7. Spread Greek yogurt on each slice of bread.

  8. Top each slice of bread with a grilled salmon fillet and a few grilled asparagus spears.

  9. Sprinkle with sesame seeds and squeeze lemon juice over the top.

  10. Serve immediately.
