How To Make Squid, Samphire & Pea Salad

Ingredients
- 500g squid, cleaned and sliced into rings
- 200g samphire, rinsed
- 200g peas, fresh or frozen
- 1 lemon, zest and juice
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

In a large pot of boiling water, blanch the samphire for 1-2 minutes, then remove and refresh in ice water.

In the same pot, cook the peas for 2-3 minutes, then remove and refresh in ice water.

Heat 1 tbsp of olive oil in a pan over medium-high heat. Add the squid and cook for 2-3 minutes until tender. Remove from the heat.

In a large bowl, combine the cooked squid, samphire, and peas. Add the lemon zest and juice, remaining olive oil, salt, and pepper. Toss to combine.

Serve the squid, samphire & pea salad chilled or at room temperature.
