Preparation: 20 minutes
Cooking: 40 minutes
Total: 60 minutes

Serves:

Ingredients

  • 1 lb salmon fillets
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 sheet of puff pastry
  • 1 cup cooked rice
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 2 hard-boiled eggs, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the paprika, garlic powder, onion powder, salt, and pepper. Rub the spice mixture all over the salmon fillets.

  3. Heat the olive oil in a skillet over medium-high heat. Sear the salmon fillets for 2 minutes on each side, until nicely browned.

  4. Roll out the puff pastry on a lightly floured surface. Place the cooked rice in the center of the pastry, leaving a border around the edges.

  5. Arrange the seared salmon fillets on top of the rice. Sprinkle with the chopped dill, parsley, green onions, and chopped eggs.

  6. Fold the edges of the puff pastry over the salmon, sealing it tightly. Place the coulibiac on a baking sheet.

  7. Bake for 30-35 minutes, or until the pastry is golden brown and flaky.

  8. Serve the spiced salmon coulibiac with lemon wedges on the side.
