Serves:
Ingredients
- 1 lb salmon fillets
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 sheet of puff pastry
- 1 cup cooked rice
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 hard-boiled eggs, chopped
- Lemon wedges, for serving
Instructions
-
Preheat the oven to 400°F (200°C).
-
In a small bowl, mix together the paprika, garlic powder, onion powder, salt, and pepper. Rub the spice mixture all over the salmon fillets.
-
Heat the olive oil in a skillet over medium-high heat. Sear the salmon fillets for 2 minutes on each side, until nicely browned.
-
Roll out the puff pastry on a lightly floured surface. Place the cooked rice in the center of the pastry, leaving a border around the edges.
-
Arrange the seared salmon fillets on top of the rice. Sprinkle with the chopped dill, parsley, green onions, and chopped eggs.
-
Fold the edges of the puff pastry over the salmon, sealing it tightly. Place the coulibiac on a baking sheet.
-
Bake for 30-35 minutes, or until the pastry is golden brown and flaky.
-
Serve the spiced salmon coulibiac with lemon wedges on the side.
