How To Make Quinoa, Squash & Broccoli Salad

Ingredients
- 1 cup quinoa
- 1 small butternut squash, peeled and diced
- 1 head broccoli, cut into florets
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Cook the quinoa according to package instructions and set aside.

Preheat the oven to 400°F (200°C). Toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper. Place onto a baking sheet and roast for 15-20 minutes, or until tender.

In a steamer basket, steam the broccoli florets for about 5 minutes, or until they turn bright green and are cooked but still crisp. Set aside to cool.

In a large bowl, combine the cooked quinoa, roasted butternut squash, steamed broccoli, dried cranberries, and chopped walnuts.

In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the quinoa, squash & broccoli salad chilled or at room temperature.
