  • 8 oz pasta (penne or fusilli)
  • 2 cans of tuna, drained
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sliced black olives
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water.

  2. In a large mixing bowl, combine the cooked pasta, tuna, red onion, cucumber, cherry tomatoes, parsley, and black olives.
