How To Make Chicken & Chorizo Jambalaya

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 bell peppers, diced
- 3 cloves garlic, minced
- 1 chicken breast, diced
- 200g chorizo sausage, sliced
- 2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 cup long grain rice
- 400ml chicken broth
- 400g canned diced tomatoes
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, bell peppers, and garlic. Cook until onions are translucent.

Add chicken and chorizo sausage. Cook until chicken is browned and cooked through.

Stir in Cajun seasoning, paprika, thyme, and oregano. Cook for 2 minutes.

Add rice, chicken broth, and diced tomatoes. Season with salt and pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.

Remove from heat and let sit for 5 minutes. Fluff with a fork.

Serve hot, garnished with fresh parsley.
