Ingredients

  • 4 cups of chicory leaves
  • 2 oranges, peeled and segmented
  • 1/4 cup of thinly sliced red onion
  • 1/4 cup of chopped fresh mint leaves
  • 1/4 cup of chopped fresh cilantro leaves
  • 1 tablespoon of grated ginger
  • 2 tablespoons of lemon juice
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicory leaves, orange segments, red onion, mint, and cilantro.

  2. In a small bowl, whisk together the grated ginger, lemon juice, olive oil, salt, and pepper to make the dressing.

  3. Pour the dressing over the salad and toss gently to combine.

  4. Serve chilled and enjoy!
