How To Make Caramelised Onion & Chicory Tart with Gorgonzola

Ingredients
- 1 pre-made tart shell
- 2 large onions, thinly sliced
- 2 tbsp butter
- 1 tsp sugar
- 2 heads chicory, chopped
- 100g gorgonzola cheese, crumbled
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

In a large skillet, melt the butter over medium heat. Add the onions and sugar, and cook until caramelised, about 15 minutes. Season with salt and pepper.

Roll out the pre-made tart shell and press it into a tart pan. Dock the crust with a fork.

Blind bake the tart shell for 10 minutes.

Remove the tart shell from the oven and spread the caramelised onions evenly over the crust.

Top with the chopped chicory and crumbled gorgonzola cheese.

Bake for an additional 15-20 minutes, or until the tart is golden brown and the gorgonzola is melted and bubbly.

Remove from the oven and let cool for a few minutes before serving.
