How To Make Yorkshire Parkin & Blackberry Trifle

Ingredients
- 125g unsalted butter
- 100g brown sugar
- 125g golden syrup
- 125g black treacle
- 225g self-raising flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 100g fresh blackberries
- 300ml double cream
- 50g icing sugar
- 1 tsp vanilla extract
Instructions

Preheat the oven to 160°C (325°F). Grease and line a 20cm square baking tin.

In a saucepan, melt the butter, brown sugar, golden syrup, and black treacle over low heat until combined. Remove from heat and let cool slightly.

In a large mixing bowl, sift the flour, ginger, cinnamon, and nutmeg. Add the melted butter mixture and stir until well combined.

Pour the batter into the prepared tin and smooth the surface. Bake for 40-45 minutes, or until a skewer inserted into the center comes out clean.

Remove the Parkin from the oven and let cool in the tin. Once cooled, cut into small squares.

In a separate bowl, whip the double cream, icing sugar, and vanilla extract until soft peaks form.

In serving glasses or bowls, layer the Parkin squares, fresh blackberries, and whipped cream. Repeat the layers until the glasses or bowls are filled.
