How To Make Mexican Salad with Tortilla Croutons

Ingredients
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels
- 1/2 cup black beans, drained and rinsed
- 1/4 cup red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tbsp olive oil
- 1 tsp cumin
- Salt and pepper to taste
- 2 corn tortillas, cut into small squares
- Cooking spray
Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, combine the mixed greens, cherry tomatoes, corn kernels, black beans, red onion, avocado, and cilantro.

In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. Pour the dressing over the salad and toss to combine.

Spray the tortilla squares with cooking spray and spread them on a baking sheet. Bake for 8-10 minutes or until crispy and golden.

Remove the tortilla croutons from the oven and let them cool slightly.

Divide the salad onto plates and sprinkle with tortilla croutons. Serve immediately.
