  • 4 heads of chicory
  • 1 cup of walnuts, chopped
  • 1/2 cup of sugar
  • 1/4 cup of water
  • 1/2 tsp of salt
  • 1/4 tsp of cinnamon


  1. Preheat your oven to 400°F (200°C).

  2. Cut the bottoms off the chicory heads to create cups. Place them on a baking sheet.

  3. In a small saucepan, combine the sugar and water over medium heat. Stir until the sugar has dissolved.

  4. Add the walnuts, salt, and cinnamon to the saucepan. Cook for 5 minutes, stirring occasionally.

  5. Pour the walnut mixture onto a lined baking sheet and spread it out evenly. Allow it to cool and harden.

  6. While the walnut brittle cools, place the chicory cups in the preheated oven and roast for 10 minutes or until slightly charred.

  7. Remove the chicory cups and let them cool.

  8. Crush the walnut brittle into small pieces.

  9. Fill each chicory cup with the crushed walnut brittle.

  10. Serve and enjoy!
