Ingredients
- 4 pork chops
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp butter
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can (15 oz) butter beans, drained and rinsed
- 1/4 cup chicken broth
- 2 tbsp Dijon mustard
- 1 tbsp honey
- Fresh parsley, chopped (for garnish)
Instructions

Season the pork chops with garlic powder, dried thyme, salt, and black pepper.

Heat olive oil in a large skillet over medium heat. Add the pork chops and cook for 4-5 minutes per side until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, melt the butter over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.

Add the butter beans to the skillet and sauté for 2-3 minutes until heated through.

Pour in the chicken broth, Dijon mustard, and honey. Stir to combine and simmer for 2-3 minutes until the sauce thickens slightly.

Return the pork chops to the skillet and coat them with the mustardy butter bean sauce. Cook for an additional 2-3 minutes until everything is heated through.

Serve the pork chops with the mustardy butter beans on the side, garnished with fresh chopped parsley.
