How To Make Baby Bok Choy with Cashews
Baby bok choy with cashews is a salad recipe ready to serve on the side in minutes! Packed with delicious savory flavorings and some added crunch.

Ingredients
- 2tbspolive oil
- 1cupgreen onions,chopped, including green ends
- 3garlic cloves,chopped
- ⅛tspground ginger
- 1lbbaby bok choy,rinsed, larger leaves separated from base, base trimmed but still present, holding the smaller leaves together
- ½tspdark sesame oil
- Salt and freshly ground black pepper
- ½cupcashews,chopped, roasted, salted
Instructions

Heat the olive oil in a large sauté pan on medium-high heat.

Add the onions, garlic, and ginger, then stir together and cook for 1 minute.

Add the bok choy, then sprinkle sesame oil and a small pinch of salt on top.

Cover, then let the baby bok choy cook down for approximately 3 minutes.

Remove the cover, then lower the heat to low.

Stir, then let cook for about 1 to 2 minutes, until the bok choy is just cooked.

Gently mix in the cashews.
