  • 1 lb ground pork
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped green onions
  • 1 tsp minced ginger
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup sliced shiitake mushrooms
  • 1 cup baby bok choy, chopped
  • 1/4 cup chopped cilantro
  • 1 tbsp sesame oil

Instructions

  1. In a large bowl, combine ground pork, breadcrumbs, green onions, ginger, garlic, soy sauce, and hoisin sauce. Mix until well combined.

  2. Shape the mixture into small meatballs, about 1 inch in diameter.

  3. In a large pot, bring chicken broth and water to a boil. Add the meatballs and simmer for 10 minutes.

  4. Add mushrooms and bok choy to the pot and simmer for an additional 5 minutes.

  5. Stir in cilantro and sesame oil. Remove from heat.

  6. Serve the meatballs in bowls with hot broth.
