Serves:

Ingredients

  • 1 whole turkey (12-14 lbs)
  • 1 cup chopped pecans
  • 1 cup cooked crumbled sausage
  • 1 cup cooked and chopped chestnuts
  • 2 cups breadcrumbs
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary, chopped
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Olive oil for roasting
  • 8 shallots, peeled and halved

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. In a large bowl, combine the pecans, sausage, chestnuts, breadcrumbs, onion, celery, garlic, thyme, rosemary, and chicken broth. Mix well and season with salt and pepper.

  3. Rinse the turkey and pat it dry with paper towels. Stuff the turkey cavity with the stuffing mixture.

  4. Rub the turkey with olive oil and season with salt and pepper.

  5. Place the turkey on a roasting rack in a roasting pan. Add the shallots around the turkey.

  6. Roast the turkey for about 15 minutes per pound, or until the internal temperature reaches 165°F (75°C).

  7. Baste the turkey with its juices every 30 minutes.

  8. Remove the turkey from the oven and let it rest for 20-30 minutes before carving.

  9. Serve the roast turkey with the pecan, sausage, and chestnut stuffing, along with the roasted shallots.
