How To Make Moist Turkey Crown with Chestnut Truffle Stuffing

Ingredients

  • 1 turkey crown (around 2 kg)
  • 200g chestnut puree
  • 50g truffle oil
  • 100g breadcrumbs
  • 1 onion, finely diced
  • 2 cloves of garlic, minced
  • 2 sprigs of thyme, leaves picked
  • Salt and pepper, to taste
  • 200ml chicken or vegetable stock
  • 4 tbsp olive oil

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a bowl, mix together the chestnut puree, truffle oil, breadcrumbs, diced onion, minced garlic, thyme leaves, salt, and pepper.

  3. Carefully lift the skin of the turkey crown and stuff the chestnut truffle mixture under the skin, spreading it evenly.

  4. Rub the outside of the turkey crown with olive oil and season with salt and pepper.

  5. Place the turkey crown in a roasting pan and pour the stock into the bottom of the pan.

  6. Cover the turkey with foil and roast in the preheated oven for 1 hour.

  7. Remove the foil and continue to roast for another hour, basting the turkey with the cooking juices every 20 minutes, until the turkey is golden brown and cooked through (the internal temperature should reach 75°C / 165°F).

  8. Remove the turkey from the oven and let it rest for 10 minutes before carving.

  9. Serve the moist turkey crown with the chestnut truffle stuffing, and enjoy!
