Ingredients

  • 1 cross rib roast (about 3 pounds)
  • 2 tablespoons of olive oil
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1 tablespoon of dried thyme
  • 1 tablespoon of paprika
  • Salt and pepper to taste
  • 1 cup of beef broth

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. Rub the cross rib roast with olive oil, garlic powder, onion powder, dried thyme, paprika, salt, and pepper.

  3. Heat a large skillet over medium-high heat and sear the roast on all sides until browned.

  4. Transfer the roast to a roasting pan and pour the beef broth into the pan.

  5. Cover the roasting pan with foil and roast in the preheated oven for about 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium doneness.

  6. Remove the foil and let the roast rest for 15 minutes before slicing.
