  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon cumin powder
  • Salt and pepper to taste
  • 2 medium beetroots, boiled and diced
  • 1 apple, diced
  • 1 small red onion, finely chopped
  • Juice of 1 lemon
  • Fresh cilantro, chopped for garnish


  1. Rinse the rice under cold water until the water runs clear. In a saucepan, bring the vegetable broth to a boil. Add the rice, cover, and simmer for about 15 minutes or until the rice is cooked through.

  2. In a separate pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

  3. Add the cooked rice to the pan with onions and garlic. Sprinkle cumin powder, salt, and pepper. Stir well to combine and cook for another 5 minutes.

  4. In a mixing bowl, combine the diced beetroots, apple, and red onion. Squeeze the lemon juice over the mixture and toss gently to combine.

  5. Serve the green rice on a plate and top with the beetroot and apple salsa. Garnish with fresh cilantro.
