Ingredients

  • 1 small red cabbage, thinly sliced
  • 2 medium beetroots, peeled and grated
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté until fragrant.

  2. Add red cabbage and beetroot to the pan, stirring well to combine. Cook for 5 minutes.

  3. In a small bowl, whisk together apple cider vinegar, honey, salt, and pepper. Pour the mixture over the cabbage and beetroot, stirring to coat evenly.

  4. Reduce heat to low, cover the pan and let it simmer for about 20 minutes until the cabbage is tender.

  5. Serve hot as a side dish.
