Serves:

Ingredients

  • 1 cup rolled oats
  • 2 cups water
  • Pinch of salt
  • ½ cup beetroot, grated
  • 1 apple, peeled and chopped
  • ¼ cup dried cranberries
  • 2 tablespoons honey
  • ½ teaspoon cinnamon
  • ¼ cup toasted hazelnuts, chopped

Instructions

  1. In a saucepan, bring water to a boil. Add the rolled oats and salt, reduce heat, and simmer for 10-15 minutes until the porridge thickens.

  2. In a separate saucepan, combine the grated beetroot, chopped apple, dried cranberries, honey, and cinnamon. Cook over medium heat for 5-7 minutes until the mixture is soft and slightly thickened.

  3. Divide the cooked porridge into four bowls. Top each bowl with a generous spoonful of the beetroot and apple compote.

  4. Sprinkle with toasted hazelnuts and serve hot.
