  • 2 medium-sized beetroots, cooked and grated
  • 1 cup red grapes, halved
  • 1 apple, peeled, cored, and diced
  • 1 small red onion, finely chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a bowl, combine the grated beetroot, halved grapes, diced apple, and chopped red onion.

  2. In a separate small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the beetroot mixture and toss well to combine.

  4. Let the relish sit for at least 10 minutes to allow the flavors to meld together.
