Ingredients

  • 4 fish fillets (such as cod, tilapia, or salmon)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups diced fresh beetroot
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon
  • 1 tbsp honey

Instructions

  1. Season the fish fillets with salt and black pepper.

  2. Heat olive oil in a pan over medium heat.

  3. Add the fish fillets to the pan and cook for 4-5 minutes on each side, or until cooked through.

  4. While the fish is cooking, prepare the beetroot salsa. In a bowl, combine the diced beetroot, red onion, cilantro, lemon juice, and honey. Mix well.

  5. Serve the panfried fish topped with the fresh beetroot salsa.

  6. Enjoy!
