How To Make Mustardy Beetroot & Lentil Salad

Ingredients
- 2 cups cooked lentils
- 2 medium beetroots, roasted and diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/4 cup extra virgin olive oil
- Salt and pepper, to taste
Instructions

In a large salad bowl, combine cooked lentils, roasted beetroots, red onion, and parsley.

In a small bowl, whisk together Dijon mustard, apple cider vinegar, honey, olive oil, salt, and pepper to make the dressing.

Pour the dressing over the lentil and beetroot mixture. Toss gently to combine.

Serve the salad chilled or at room temperature.
