How To Make Squash, Mushroom & Gorgonzola Pilaf

Ingredients
- 1 cup butternut squash, diced
- 1 cup mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup long-grain rice
- 1/2 cup gorgonzola cheese, crumbled
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Heat olive oil in a large skillet over medium heat.

Add onion and garlic and cook until softened.

Add mushrooms and squash and cook until tender.

Stir in rice and cook for 2 minutes.

Pour in vegetable broth and bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes or until rice is cooked.

Stir in gorgonzola cheese until melted and well combined.

Season with salt and pepper to taste.
