Serves:

Ingredients

  • 1 cup butternut squash, diced
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup long-grain rice
  • 1/2 cup gorgonzola cheese, crumbled
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add onion and garlic and cook until softened.

  3. Add mushrooms and squash and cook until tender.

  4. Stir in rice and cook for 2 minutes.

  5. Pour in vegetable broth and bring to a boil.

  6. Reduce heat, cover, and simmer for 20-25 minutes or until rice is cooked.

  7. Stir in gorgonzola cheese until melted and well combined.

  8. Season with salt and pepper to taste.

  9. Serve hot and enjoy!
