Ingredients

  • 2 medium-sized beetroots, peeled and grated
  • 1 carrot, peeled and grated
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the grated beetroot, carrot, and sliced red onion.

  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper.

  3. Pour the dressing over the beetroot mixture and toss until well combined.

  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.

  5. Serve chilled and enjoy!
