Wonderful change to a plain old quesadilla. Sweet, salty and barbecued! Use any type of firm red apple. Additional options: add barbecued chicken or chopped jalapeno peppers. Serve warm with sour cream, salsa, guacamole or all three.
How To Make Apple Gouda Quesadillas
Ingredients
- 8 8-inch flour tortillas
- 2 tbsp olive oil
- 2 tbsp dijon mustard
- 2 green onions, chopped
- 2 red apples, cored and thinly sliced
- 2 cup Gouda cheese, shredded
Instructions

Preheat your grill to high heat.

Brush olive oil onto one side of a tortilla, and plate it with the oiled portion facing side down.

Spread about 1/2 tbsp. of mustard on the other side of the tortilla, and top it with green onion, apple slices, and about 1/2 cup of shredded cheese. Fold the tortilla in half to make a quesadilla. Repeat the process with the remaining tortillas.

Brush the grill with oil and place the quesadillas carefully on it.

Grill the quesadillas for about 3 minutes or until the bottom portion turns crisp. Do the same for the other side.

Once you're done cooking, remove the quesadillas from the grill. Cut them into quarters and serve. Enjoy!
